Friday's Fixin's: Mock Egg Salad

Happy Friday!  What an amazing week it’s been…and more fun is in store next week! I’m feeling so amazingly full of gratitude that life post-FBC (f-bomb breast cancer for new readers) keeps getting better and better. One thing that I’m learning about Silver Linings is that they seem to multiply. So doggone amazing and wonderful!

Anyhoo, I have a new favorite cookbook and recipe for Friday’s Fixin’s: Mock Egg Salad. The recipe comes from Susan O’Brien’s super fabulous cookbook, Gluten-free Vegan Comfort Food.

Oh yes, there is indeed comfort food in the world of gluten-free vegan food. Pinky promise!

I eat the Mock Egg Salad on a piece of gluten free multigrain toast or multigrain crackers. Super yummy. hope that you enjoy this as much as I do (Silver Lining).
