This week, I thought I was pregnant. Uh huh. GULP. Why? Well, because I woke up craving baked pumpkin oatmeal, something I’ve never had in my life. This wake-up-craving-something-I-had-never-had-before feeling happened one other time in my life: when I was pregnant with Sweetly Six. After I realized that it would be impossible for me to be pregnant, I decided that I needed to curb the craving anyway (Silver Lining).
So, I looked on the web for a great vegan pumpkin baked oatmeal recipe and couldn’t find one. There were lots of vegan oatmeal recipes, but none was baked with pumpkin. So, I did something that I’ve never done before: I made my very own recipe (Silver Lining).
Though I followed some guidelines from other recipes, this recipe was baked and taste-tested in my very own kitchen. I admit to doing a little happy dance when my taste buds sang after the first bite! I hope that you enjoy it as much as I have!
